Ingredients:
- 4 lbs Spread Oak Farm To Table beef short ribs
- Salt and pepper
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 1 cup red wine
- 2 cups beef broth
- 2 tbsp tomato paste
- 2 sprigs of fresh thyme
- 2 bay leaves
Instructions:
1. Preheat your oven to 325°F
2. Season the short ribs with salt and pepper.
3. Heat the olive oil in a large Dutch oven over medium heat.
4. Brown the short ribs on all sides in batches. Remove and set aside.
5. Add the onion, carrots, and celery to the pot. Cook until softened.
6. Add the garlic and cook for another minute.
7. Pour in the red wine and scrape up any browned bits from the bottom of the pot.
8. Stir in the beef broth and tomato paste. Add the thyme and bay leaves.
9. Return the short ribs to the pot, nestling them in the liquid.
10. Cover the pot and transfer it to the oven.
11. Braise the short ribs for 2.5 to 3 hours or until the meat is tender.
12. Remove the thyme sprigs and bay leaves before serving.
*If you'd prefer to sub olive oil for vegetable oil - you can increase to 350 degree oven temp and medium-high stove top.

- Cheese slices - (we love pepper jack)
- Medium flour tortillas
- Condiments (ketchup, mustard, mayonnaise, siracha-mayo, etc.)
- Toppings (lettuce, tomato, onions, pickles)
Instructions:
1. Preheat a cast-iron skillet or griddle over medium-high heat.
2. Divide the ground beef into small portions, approximately 2-4 ounces each, and shape them into balls.
3. Season each ball of meat generously with salt and pepper.
4. Place a tortilla on top of the ball of meat.
5. Use a tortilla press or a heavy skillet to press down on the tortilla and smash the meat.
6. Cook the pressed burger for 1-2 minutes on each side, allowing it to develop a crispy, caramelized crust.
7. Flip the tortilla with burger facing up and add a slice of cheese on top of the smashed patty to melt.
8. Add your desired condiments and toppings, such as lettuce, tomato, onions, and pickles.

- 1/2 cup breadcrumbs
- 1 cup milk
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 large egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- Olive oil, for cooking
Instructions:
1. Preheat the oven to 400°F (200°C).
2. Soak breadcrumbs in milk for 10 minutes or until completely saturated
3. In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, onion, garlic, egg, salt, pepper, oregano, basil, and red pepper flakes. Mix well until fully combined.
4. Shape the mixture into meatballs of your desired size and place them on a baking sheet lined with parchment paper.
